Apple Fritter Pancakes with TM

Happy Sunday! It’s a little cloudy here this morning, and we have been stewing about what to eat for breakfast. We finally decided to break out the griddle and make Apple Fritter Pancakes. The Apple Fritter was added when we realized we were going to be making bacon and we had some leftover apples that needed to be eaten. Bacon grease to fry them up, and apples to make everything better. I’ve only had one apple fritter in my life, and it was at a slumber party when I was eight years old… I have never forgotten it. These don’t have icing, but they will cure your craving for those evil gluten fritters from the donut shop. They are doughy and sweet tart from the apples. Hopefully they can warm you and yours up on a cloudy morning this season!

Grain Free Apple Fritter Pancakes

Servings: 8 Thick, 5-inch pancakes


1) Mix the dry ingredients together. Add the wet ingredients. Mix well.

2) Cook over medium heat in a pan with butter or bacon grease, if using a griddle, cook at about 350 degrees. These do not burn easily, and they need to cook at least 5 minutes on each side so the apples are cooked.

3) Top with a pat of butter, sprinkle with cinnamon, and drizzle maple syrup to your taste. Enjoy!
